Protein Bread!

Sweet Cinnamon Protein Bread. It's packed with healthy ingredients and it's got protein in the title, what more of bread could you ask for? It's a recipe we've been working on a while and we're really happy with the results. Once you try it out, we think you will too! 


  • 1c. (80g) Rolled Oats 
  • 1/2c. (56g) Coconut Flour
  • 3 Scoops (90g) Vanilla Protein Powder
  • 1/2t. Salt
  • 1 1/2t. Baking Powder
  • 1T. Cinnamon
  • 1 1/2 T. (31g) Honey
  • 2t. Vanilla Extract
  • 3 Large Egg Whites  or 1/2 c. (121g)
  • 1/2 c (75g) Fat Free Plain Yogurt
  • 1/2 c (122g) Unsweetened Apple Sauce






Put your Rolled Oats into a Blender and blend for a minute or two. You've just created Oat Flour.

In one bowl you will add your Oat flour and all your other DRY ingredients.  Mix well.

In another bowl, add all your WET ingredients.  Mix well.

Carefully pour your wet ingredients into your dry and mix well.

The texture of this batter is like Banana bread or Zucchini bread. It's sticky.

Coat your loaf pan (we used two mini loaf pans today) with some no-stick cooking spray.  

Pour your batter into the pan. Spread it out evenly .

As you can see from the pictures it doesn't rise very much.

Bake at 350 F. for 25 - 30 minutes.
( To test, insert a toothpick into the center. When you pull it back out, if it's clean it's done if there's sticky batter you need to bake a few more minutes. )

Let it cool for a few minutes.  Remove from the pan and enjoy a warm sweet fresh piece of Protein Bread. You can eat it alone or with a drizzle of honey.
