Looking for a healthy snack or a compliment to a meal like our Turkey Meatloaf recipe from last week? Then try out our Spicy Roasted Sweet Potato Wedges Recipe! It's an easy, healthy recipe which you'll be able to prep in only a few minutes!
- 3 Sweet Potatoes (try to pick them as round as you can)
- 2 T. Olive oil
- 1 t. Paprika
- 1/2 t. Cumin
- 1 t. Chili Pdr.
- 1 t. Garlic Pdr.
- Salt & Pepper to taste
First, wash your Sweet potatoes and cut the very ends off. (we don't peel them)
Then, cut them in half and cut those in half and once again until you have wedges.
While they are cooking, put your Olive oil and all your spices in a gallon zip lock baggie and zip it closed. Squeeze and knead the baggie until it's all blended together.
When the 6 minutes are up, the potatoes are warm and just started to cook. Doing this first will help the oil and spices to adhere and soak into the potatoes.
Carefully put the potatoes into the baggie and zip it closed. Work those potatoes around to make sure
they are all covered in the spices.
Let it marinate while your oven heats up.
Preheat your oven now to 450 degrees.
Lay the wedges out on a cookie sheet or cake pan in a single layer.
Bake for 15 minutes......Flip them to their other side and bake 15 more minutes.
These are fantastic with either of our Turkey meatloaf recipes, our Turkey burger or our Quinoa & Black Bean burger recipes.
